Leave the bacon behind for this BLT. It’s so beautifully arranged and full of flavor, you won’t miss the meat!
tablespoons extra-virgin olive oil
tablespoon red wine vinegar
tablespoon finely chopped shallots
teaspoon Dijon mustard
cups packed arugula or mixed greens (about 5 oz)
medium tomatoes, sliced
oz brie cheese, cut into bite-size strips
In small bowl, mix dressing ingredients with wire whisk.
In large bowl, toss arugula with half of the dressing. Arrange sliced tomatoes on medium platter. Place arugula and brie around tomatoes; drizzle with remaining dressing. Serve immediately.
Make this salad extra special by using just-picked heirloom tomatoes; use sea salt and freshly ground black pepper in the dressing.
Add a favorite herb, such as tarragon, basil or oregano, to the dressing.
