Ingredients

cups water, milk or soy milk
1
cup quinoa, rinsed
1/4
teaspoon ground cinnamon
1
cup fresh or frozen blueberries (thawed)
1/4
cup toasted pecans or walnuts
Maple syrup (optional)

  • 1 In a small saucepan, heat water to boiling over high heat. Add quinoa; return to boiling. Reduce heat to low; cover and cook for 15 minutes or until liquid is absorbed (mixture will still be moist).
  • 2 Stir in cinnamon. Spoon quinoa into bowls. Top with blueberries, nuts, and sweeten to taste with a drizzle of maple syrup.

I really enjoy quinoa but this was too bland and not sweet enough for my tastes. Maybe a differnt variety of fruits would help?

This is really good. I did tweak it a bit. I added about a tsp. Of brown sugar, 1T dried cranberries and a T. Of raisins (however, I was only making 1/2 recipe since I was cooking for 2) , also 1/2 tsp. vanilla. I served it with a Tablespoon or 2 of fat free vanilla Greek yogurt. My husband gave it 5 stars!!

This is very good. I added one tablespoon of sweetener to the quinoa and we used maple syrup over the top. We like oatmeal better, but this is a nice change.
