Blueberry-White Chocolate Mug Cakes

Blueberry and white chocolate make the perfect couple in our dessert for two that can be ready in 8 minutes.

Ingredients

  • 1/3 cup Original Bisquick™ mix
  • 1/4 cup granulated sugar
  • 3 tablespoons plus 1 teaspoon milk
  • 3 tablespoons vegetable oil
  • 1/4 teaspoon vanilla
  • 1 egg
  • 1/4 cup fresh blueberries
  • 1/4 cup white vanilla baking chips
  • Fresh whipped cream, if desired

Steps

    In medium bowl, beat Bisquick mix, sugar, milk, oil, vanilla and egg until just a few small lumps remain. Divide batter evenly into 2 ungreased mugs.

    Top each mug with blueberries and chips (do not stir).

    Microwave both mugs at the same time uncovered 2 1/2 to 3 minutes or until cakes are done and toothpick inserted in center comes out clean.

    Cool slightly; top with whipped cream and more blueberries just before serving, if desired.

    Swap some of the white vanilla baking chips for semisweet chocolate chips for double-chocolate flavor.

    Make sure the mugs hold at least 12 oz of liquid, or the batter may overflow in the microwave.
