Beef Stew over Mashed Potatoes

cup Green Giant® Valley Fresh Steamers® frozen mixed vegetables (from 12-oz bag)

can (14.5 oz) Muir Glen® organic diced tomatoes, drained

jar (12 oz) fat-free beef gravy

teaspoon dried marjoram leaves

teaspoon pepper

cups water

tablespoons light stick butter

teaspoon garlic salt
1/3
cup low-fat (1%) milk

cup Betty Crocker® Potato Buds® mashed potatoes (dry)

tablespoon chopped fresh parsley
  • 1 In 12-inch nonstick skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • 2 Stir in mixed vegetables, tomatoes, gravy, marjoram and pepper. Heat to boiling. Reduce heat to low; simmer uncovered 8 to 10 minutes, stirring occasionally, until vegetables are tender.
  • 3 Meanwhile, in 2-quart saucepan, heat water, butter and garlic salt to boiling. Remove from heat; add milk. Stir in potatoes (dry) and parsley. Let stand about 30 seconds or until liquid is absorbed.
  • 4 Fluff potatoes with fork. Serve stew over potatoes.
