Banana-Raisin Muffins

Ingredients

  • 2 cups Cheerios™ cereal
  • 1 1/4 cups Gold Medal™ all-purpose flour
  • 1/3 cup packed brown sugar
  • 2 1/2 teaspoons baking powder
  • 1 cup mashed ripe bananas (2 to 3 medium)
  • 1 cup raisins
  • 2/3 cup milk
  • 3 tablespoons vegetable oil
  • 1 egg

    Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening, or spray with cooking spray.

    Place cereal in resealable food-storage plastic bag; seal bag and coarsely crush with rolling pin or meat mallet. In large bowl, mix cereal, flour, brown sugar and baking powder. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups.

    Bake 18 to 22 minutes or until golden brown.

  • Brown bananas? Toss them, unpeeled, in the freezer. They'll be ready when you need them for any recipe using mashed bananas. Simply thaw and mash.
