Banana Cupcakes with Browned Butter Frosting (Gluten Free)

Reynolds™ Baking Cups

box (15 oz) Betty Crocker® Gluten Free yellow cake mix
1
cup mashed ripe bananas (2 medium)
1/3
cup butter, melted*
1/3
cup water
3
eggs, beaten
2
teaspoons gluten-free vanilla
Frosting
1/3
cup butter*
3
cups powdered sugar
1
teaspoon vanilla
3
to 4 tablespoons milk
  • 1 Heat oven to 350°F. Place Reynolds Baking Cups in each of 17 regular-size muffin cups. In large bowl, stir cupcake ingredients just until dry ingredients are moistened. Spoon batter evenly into muffin cups.
  • 2 Bake 16 to 18 minutes or until toothpick inserted in center comes out clean. Remove from pan to cooling rack. Cool completely, about 30 minutes.
  • 3 In 1-quart saucepan, heat 1/3 cup butter over medium heat just until light brown, stirring occasionally. (Watch carefully because butter can burn quickly.) Remove from heat. Cool slightly, about 5 minutes.
  • 4 In medium bowl, beat butter, powdered sugar, vanilla and enough milk until smooth and spreadable. Spread frosting over cooled cupcakes.

    I made these today. No one in our house is on a GF diet. I used regular cake mix. They turned out great. The frosting was quick and easy and really good. No problems at all. Id say the others who had problems wtih this recipe probably dont know how to follow a recipe very well.....

    These are delish! I made these and used three bananas. I used butter cream icing instead of the browned butter frosting. I gave them to my son and his friends and they thought they were so good! I'm totally pleased,with these. I will be making these again for sure. I'm finding out that gluten free doesn't have to be awful! Thank you Betty Crocker !

    I made these with out the GF. I added pecas, cinnamon and nut meg to the batter as sugguested in other reviews which turned out beautifully. The cup cake its self was excellent , but i did not like the frosting very much. Maybe im just not good at frosting but i found it a little chalky. Overall it was alright. I would make these again but maybe just buy cream cheese frosting or use a different recipe.
