Peanut-Soy Dressing

tablespoons reduced-sodium soy sauce

tablespoons cider vinegar

tablespoons honey

tablespoon creamy peanut butter

teaspoon crushed red pepper
1/2
teaspoon grated gingerroot
Asian Chicken Salad

cups coleslaw mix (from 16-ounce bag)
3
cups washed fresh spinach leaves (from 10-ounce bag)

cups cut-up cooked chicken
1
medium bell pepper, cut into bite-size strips

can (8 ounces) bamboo shoots, rinsed and drained
  • 1 In small bowl, beat all dressing ingredients with whisk until blended.
  • 2 Toss salad ingredients in large bowl; drizzle with dressing.

    The recipe looks really simple and I will definitely give it a try. Am I crazy or is there a typo with the bamboo shoots? Looks like bean sprouts in the photo and that would add a nice fresh crunch.

    This dressing gets some complex flavors in such a brief amount of prep time. I used rice wine vinegar because we often use that for Asian dishes. Served it over broccoli slaw and grilled chicken. Delish!
