Apple, Radish and Celery Salsa

Ideal over pork chops or sausage, our fresh salsa recipe includes granny smith apples, chopped radishes, celery and dried cranberries.

Ingredients

  • 1 cup chopped Granny Smith apple
  • 1 cup chopped radishes
  • 1 cup chopped celery
  • 1/3 cup chopped green onions
  • 1/4 cup chopped fresh basil leaves
  • 3 tablespoons chopped sweetened dried cranberries
  • 3 tablespoons olive oil
  • 3 1/2 teaspoons honey
  • 1 1/2 teaspoons cider vinegar
  • 1 teaspoon grated lemon peel
  • 4 1/2 teaspoons lemon juice
  • Salt and pepper to taste

Steps

    In medium bowl, toss apple, radishes, celery, onions, basil and cranberries.

    In small bowl, mix oil, honey, vinegar, lemon peel and lemon juice with whisk. Pour over apple mixture and toss to coat. Season with salt and pepper.

    Cover; refrigerate 30 minutes to 2 hours. Serve chilled or at room temperature.

    For a little more sweetness, substitute a ripe pear for the apple.
