Apple, Radish and Celery Salsa

Ingredients

cup chopped Granny Smith apple

cup chopped radishes
1
cup chopped celery
1/3
cup chopped green onions
1/4
cup chopped fresh basil leaves

tablespoons chopped sweetened dried cranberries

tablespoons olive oil
3 1/2
teaspoons honey
1 1/2
teaspoons cider vinegar
1
teaspoon grated lemon peel
4 1/2
teaspoons lemon juice
Salt and pepper to taste

  • 1 In medium bowl, toss apple, radishes, celery, onions, basil and cranberries.
  • 2 In small bowl, mix oil, honey, vinegar, lemon peel and lemon juice with whisk. Pour over apple mixture and toss to coat. Season with salt and pepper.
  • 3 Cover; refrigerate 30 minutes to 2 hours. Serve chilled or at room temperature.
