Ingredients

2: packages (6 oz each) refrigerated salad-style imitation lobster

1: red apple, halved, cored, thinly sliced (1 cup)

1: fennel bulb, cut in half, thinly sliced (1 1/4 cups)

1/4: cup golden raisins

1/3: cup mayonnaise or salad dressing

1/2: teaspoon salt

1/2: teaspoon ground mustard

2: tablespoons frozen apple juice concentrate, thawed

4: cups torn romaine lettuce

1/2: cup chopped walnuts, if desired

1 In medium bowl, mix imitation lobster, apple, fennel and raisins.
2 In small bowl, beat mayonnaise, salt, mustard and apple juice concentrate with wire whisk until well blended. Pour over lobster mixture; toss.
3 Among 4 plates, divide lettuce. Top with lobster salad. Sprinkle with walnuts.
