Apple-Date Swirl Cookies

teaspoon salt

teaspoon ground cinnamon
Apple-Date Filling
1
cup chopped dates
3/4
cup finely chopped peeled apple
1/4
cup granulated sugar
1
teaspoon grated orange peel
1/4
cup orange juice
  • 1 In large bowl, beat 1/2 cup granulated, the brown sugar, butter, vanilla and egg with electric mixer on medium speed, or mix with spoon, until well blended. Stir in flour, baking soda, salt and cinnamon.
  • 2 In 1-quart saucepan, cook all Apple-Date Filling ingredients over medium-high heat, stirring constantly, until mixture boils and thickens. Boil and stir 5 minutes. Cool.
  • 3 Roll or pat dough into rectangle, 16x8 inches, between sheets of waxed paper or plastic wrap. Remove top sheet. Spread dough with cooled Apple-Date Filling. Roll up dough with filling inside, starting with 16-inch side and using waxed paper to lift and roll. Wrap tightly. Refrigerate 2 to 3 hours or until firm.
  • 4 Heat oven to 375°F. Cut roll with sharp knife into 1/4-inch slices, occasionally cleaning off knife. Place about 1 inch apart on ungreased cookie sheet. Bake 8 to 11 minutes or until lightly browned. Remove from cookie sheet to wire rack; cool.

Not bad, it was a bit difficult to make. 1 teaspoon of orange zest made the cookies taste too orangy rather than a apple-date flavor, I would omit it or add just a tiny bit. I also advise to put it in the fridge long enough for it to be extra firm because It was difficult to cut to round pieces. The cookies were too soft in the center and stuck to the cookie sheet due to the filling. But in the end everyone enjoyed them, I don't know if I'll go through all that and make them again.

I made these for the first time a few years ago and loved the way they turned out. Just the aroma of the filling when you cook it is enough to make it hard to wait for the finished cookies to come out of the oven. Just a little crisp around the edges and soft and chewy after a day or so of storage.

I didn't particularly like these (too sweet for me) but my dad, a big date fan, LOVED them. He ate just about the entire batch inside a day. I had a hard time rolling them up, and when I cut them, some cookies fell apart easily. They also didn't bake into the solid circles like in the picture--if you didn't pick them up very carefully they fell apart. I'm not quite sure what I did, but I'll try this recipe again for my dad's birthday. Does anyone have any tips on how to make the cookies bake solid?
