3-Cheese Pasta and Sausage Bake

pound sausage

tablespoon chopped fresh garlic

medium chopped shallot
1
medium chopped roasted red bell pepper

teaspoon salt
1/4
teaspoon coarse grind black pepper
1
15 oz can fire-roasted diced tomatoes
1/2
cup chicken stock
2
teaspoons Italian herb seasoning mix
1
tablespoon dried parsley
1/2
pound penne pasta
3
ounces cream cheese
1/2
cup shredded parmesan cheese
1
cup shredded mozzarella cheese
  • 1 Preheat oven to 375 F. Spray a large casserole dish with oil or butter.
  • 2 Brown and separate sausage; drain. Add garlic, shallots, roasted red bell peppers, salt and pepper. Saute 3-4 minutes. Add tomatoes, chicken stock, Italian seasoning, and parsley. Stir well and simmer 15 minutes over med-low heat.
  • 3 Meanwhile, cook pasta in salted boiling water until just under al dente and drain. Add pasta to meat mixture and stir to mix. Stir in cream cheese and mix thoroughly. Transfer to prepared casserole dish and smooth over the top. To with parmesan and mozzarella cheeses.
  • 4 Bake 20 minutes, until bubbly and cheeses are toasty. Let set 5 minutes and serve with crusty garlic bread.

Very tasty! I changed just a couple things to fit our family's preferences: no peppers, used minced onion and regular diced tomatoes. Thanks for sharing the great recipe!

Good comfort food. I used fresh bell pepper and added mushrooms. Basically mac and cheese with sausage and veges.
