Ingredients

Peanut Dressing

  • 1/2 cup Italian dressing
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce

Coleslaw

  • 1 bag (16 ounces) coleslaw mix
  • 1 can (11 ounces) mandarin orange segments, drained
  • 1 small jicama (about 1 pound), peeled and cut into 1/2-inch cubes (2 cups)
  • 1/2 cup peanuts

Steps

    In small bowl, mix all dressing ingredients with wire whisk until smooth.
  • 2
    In large bowl, toss coleslaw mix, orange segments and jicama. Toss with dressing. Sprinkle with peanuts.
