Corn and Black Bean Salsa
"I made this recipe, but without the chilies and with garlic powder, pepper and oregano instead. Really good and refreshing on a summer day."

Cinnamon-Raisin Biscuits
"Made a batch of these biscuits yesterday. Really delicious, and heated up in the microwave later for about 30 seconds after being refrigerated, tasted an awful lot like cinnamon rolls. Really good winter morning treat. Will do again."

Bistro Lentil Barley Soup
"I have made this a couple times now. For wintry weather, can't be beat... So tasty and healthy. Thanks. Oh, I forgot, I used water for the liquid instead of the beef broth. Second time I made it I cut up a cauliflower and put in. Good. I substituted the cauliflower for the carrots . Sort of had an East Indian feel ... nice."

Decadent Pecan Pie
"Made this pie for a friend's birthday. Oh, does it ever live up to its name. It was heavenly. Got rave reviews. I even made the crust from scratch (used softened butter instead of shortening). Thanks so much for the recipe"

Slow Cooker Brown Lentil Soup
"Just made this soup today. Very tasty. Had to make some changes like used 6 cups of water and 2 cans of beer for liquid. Glad I did. Omitted tomato paste and used Italian spice grinders instead of the seasonings in the recipe. I also added one stalk chopped celery and one chopped peeled potato. SO good on a cold day."

"Just made this soup. So tasty and comforting. Used water instead of chicken broth, used the beer, used turkey sausage and grinder Italian spices. Tried with some of the roasted garlic potatoes. Just scrumptious. Thanks"

Mixed Vegetable Bake
"I made this dish recently. Was very delicious. Roasted vegetables are my favorite for fall. I used two onions instead of one and omitted the carrots because I didn't have any on hand. The zucchini and red peppers were wonderful too. Will definitely make again. Thanks"

Impossibly Easy Vegetable Pie
"Just made this pie. Had a craving for spinach pie, so I cooked some spinach,(about a cup) and added about a cup of diced canned tomatoes with Italian spices, drained, about a cup of chopped onions and shredded Colby/Jack cheese. Was absolutely delicious. Yes, this recipe is very adaptable to all kinds of great veggie combos. Thanks"

Berry Yogurt Ice Pops
"Made the pops yesterday. Used about 1 cup blackberries crushed and about 1 cup strawberries quartered. Didn't have access to a blender, so tried to crush the berries together. Didn't work so well, so cooked them together til soft, a few minutes. Let cool in fridge, then mixed in vanilla yogurt. I tasted it before frozen== what a wonderful tart/sweet berry flavor. My friend just had one frozen, got a 5 star review. Can't wait to try all sorts of flavor combos while summer's still here. Thanks. "

Blackberry Cobbler
"I made the cobbler yesterday with blackberries that I picked. It turned out so scrumptious, perfect sweet/tart taste and perfect consistency. Didn't need any cream, etc., wonderful as is. Didn't last long though. Luckily, I have a lot more berries in the freezer. Blackberry cobbler in January, maybe?"

Blueberry- and Peach-Topped Ginger Pudding
"Just made the dessert pudding. Really loved it for summer. Very light and refreshing. Used instant vanilla pudding with 2% milk and nectarines instead of peaches and cinnamon instead of the ginger. Beautiful colors, too. Looking forward to making it again. "

Zucchini Appetizers
"Just made the zucchini appetizers. Wow., really tasty. Didn't have parmesan, so used the same amount of grated colby/monterey jack. Worked. Used about 1 tsp. each of Italian mixed seasonings and garlic and sea salt inside. Used cup of regular flour with 1 tsp. baking powder. Left out the oregano and other spice. SO delicious. I know I will eat more than my share... "

Mini Crumb Cakes
"Just made these delicious cakes. Wow... really moist and light. Added about twice the amount of cinnamon in batter (about 1 tsp.) and then added about 1/2 tsp. mixed in the crumb topping. Some of them stuck to bottom when I tried to remove, but I probably didn't grease them well enough. Baked for 25 minutes and were perfectly done, though. What a nice treat with my morning coffee."

Impossibly Easy Zucchini Pie
"Made the zucchini pie today. Really good and light and tasty, used eggs and regular flour with about 1 tsp. of baking powder because I was out of Bisquick. Turned out beautiful. Next time, I may try more zucchini and maybe chopped red bell peppers. Used grated cheddar cheese this time. Worked out. Will make again soon. Thanks"
