Skillet Ham and Vegetables au Gratin
"I really like this one, but use corn & broccoli. What I do is eliminate the onion and butter, toss the ham in with the potatoes, sauce mix, hot water (cut to about 1 1/4 cup) and pepper and continue. After the first 15 minute simmer, instead of adding carrots I add frozen corn (about 1 1/2 cup) and frozen broc (about 2 cups loosely chopped). Cover and simmer another 10 mins, then stir in about 1/4 cup half/half and the cheese (again, about a cup and a half). Very yummy! Kids & hubby love it!"

Slow-Cooked Meatball Stew
"I liked it, as did my kids, but they didn't want 2nds. My husband rates it a 5.5 out of 10. I enjoyed my leftovers! I don't think the canned mushrooms added anything (and don't think a jarred mushroom would be any different). I'd use fresh mushrooms next time if I use them at all. I had 3 russet potatos on hand, so used them (came to over 1 lb) and cut into lg "bite" sized peices. Used Trader Joe's Party Size Meatballs which come in a 20 oz bag (they're more kid-friendly in size). I too needed more than the called for gravy (since I had more potato and meatball) and used one 10.75 oz can of beef gravy, plus the gravy made from a packet (one 8 oz cup). Could have used more gravy liquid, and will next time. Didn't change anything about the carrots or can of tomatos. I cooked on Low for 1 hour, then High for 3 hrs due to my schedule, and it was cooked perfectly."

Impossibly Easy Chicken 'n Broccoli Pie
"I last reviewed on 5/28/08. Hadn't made it since, until tonight. This time I used ham, and it was even better! I added a little more chopped broc, a little extra medium cheddar, and about 1 1/2 cups diced ham. Used fat free milk in the Bisquick mixture. It was excellent! My 4 3/4 year old, 20 month old, and 47 year old loved it! With the little bit more veg and meat, its less like a quiche and I liked that. Will definately make this on a regular basis."

Ranch Oven-Fried Chicken with Warm Corn Relish
"Excellent recipe! I've made it several times now. When the pan is sprayed w/ *nonstick* spray, as stated in the instructions, the meat does not stick. Put the baking mix in a gallon size zip top bag, and its less messy. Use tongs to move meat from one spot to the other. Also, I've found chicken tenders to cook more evenly and quickly. The Ranch makes the chicken so moist, and you can use the light version! I also use either a combination of regular baking mix and multi-grain mix (from Trader Joe's) or all multi-grain, and its just wonderful. I don't bother with the Ranch corn - I just serve regular steamed corn, or corn on the cob. Add mashed potatos and maybe biscuits - YUM!"

Cowboy Casserole
"Nothing special. I used multigrain baking mix, which tasted fine, actually only using a little more than 1/2 of the mixture - these recipes usually call for way more biscuit topping than we prefer. I did use extra BBQ sauce, as suggested by others, especially since I was using 1.25 lbs of ground meat (turkey), and added another half can of beans. It would be easy enough to change up the flavor by varying the flavor of beans used, and BBQ sauce, but this just isn't worth making again. Not horrible at all, just boring for us."

Impossibly Easy Chicken 'n Broccoli Pie
"Quite easy. I prepared in advance during 27 month old's nap. Hubby liked it better than my usual chick/broc casserole. I used an 8x8x2 square pyrex instead of pie plate, and it worked fine. I added cut carrots to my son's serving, which added nice color - I might do that to begin with, and he ate quite well. I used medium cheddar - might use sharp next time for even more flavor. Might also like water chesnuts for crunch. I like prior reviewers idea of ham or sausage instead of chicken, or adding sun-dried tomato. I'd use more chicken next time."
