These after-school snack roll-ups are so speedy and simple that even the kids can make them!
Looking for a nutritious snack for your hungry kids when they arrive home from school? Here’s one that you can make and keep in the refrigerator for a couple of days.
If you don’t have time, they are easy enough for kids to assemble themselves.
Start by spreading reduced-fat cream cheese on a tortilla.

Sprinkle with shredded carrots and cheese.
Place a line of petite dill pickles along one edge of the tortilla.
Roll up the tortilla and wrap in plastic wrap. Store in the refrigerator.
My grandson, Blake (below), loves these roll-ups...probably because petite dill pickles are one of his favorite foods. Blake’s 1-year old brother, Finn, liked them, too, because he could eat them all by himself.
