Grilled Pork Tenderloin with Jalapeño-Plum Relish

This platter of juicy grilled pork and spicy plum salsa looks super-impressive, but is remarkably easy to pull off.

Forget the standard burgers, dogs, steaks and ribs—humble pork tenderloin is one of my favorite cuts of meat to grill. I love it because it’s easy to prepare, fast to cook and totally pleases any crowd I serve it to. Paired with a spicy, summery fruit relish, this meal is truly the perfect summer main dish. 

The simple but flavor-packed fruit relish comes together quickly by tossing fresh fruit with lime juice, honey, salt, jalapeño and sliced red onion. If plums aren’t in season near you, this relish is as versatile as they come. Try substituting other stone fruits like peaches or cherries, or branch out and try it with pineapple, melon or berries. It’s all good!

The pork is equally simple in preparation. All you need is a pork tenderloin, salt, pepper, red pepper flakes, garlic and onion powders, plus a bunch of fresh rosemary. Hearty herbs, like rosemary, stand up well to grilling.

The herbs and seasonings get rubbed all over the pork for lots of flavor.

Then, you grill it!

After a quick rest, slice it up and serve along with the zippy, fruity relish. Although not required, I do believe this dish tastes best when eaten al fresco.
