Bacon Cheeseburger Nacho Bake

Yep, you read that right. This casserole combines the flavors of juicy bacon cheeseburgers and the crunch of nachos.

I love a good bacon cheeseburger with lots of pickles and ketchup. The cure to a bad day, bad hangover, bad anything…what’s not to love about that kind of comfort food? So why not take all of those luscious flavors and put them in a casserole that is super easy to make, even on a busy weeknight? Your family will thank you, I promise. Here’s how to do it! 

First, brown some hamburger with chopped onions in a skillet.

Then take about eight ounces of prepared cheese product and cut it into small cubes.

Add the cheese to your ground beef along with ½ cup of cooked bacon bits. As a shortcut, I bought the real bacon bits at the grocery, but you can cook up your own too.

Let that mixture cook until the cheese is melted. Get ready for awesome smells. Next put some tortilla chips in a storage bag, and give them a good whack with a rolling pin. You want to make sure they are broken up, not crushed into dust. Don’t let all your aggressions out on the poor chips…just a few aggressions. When it’s all said and done, you want to have about three cups of crushed-up chips.

Put half the chips at the bottom of a greased 9 x 13-inch pan.

Then spread half the cheesy meat mixture on top of the chips.

Then add another layer of chips and meat. Yep, this is a double-decker sort of situation.

Finally, sprinkle a cup or so of shredded cheddar cheese on the top. More cheese you say? Yes, yes, yes.

Next pop it in a 350-degree oven for about 15-20 minutes, just until the cheese is nice and bubbly. Top it with whatever you like! I enjoyed my serving just like I like my cheeseburgers, with lots of pickles, lettuce and a drizzle of ketchup and mustard. Yum!
