Work dough on a floured surface, using hands or an electric mixer with dough hooks, into a smooth, elastic mass. Kneading develops the gluten in flour and makes bread, biscuits and other baked goods have an even texture and a smooth, rounded top. Kneading by hand can take up to 15 minutes.
