  Eggs, How to Separate

Eggs are easiest to separate when cold. Purchase an inexpensive egg separator; place over a small bowl. Crack egg; open shell, allowing yolk to fall into center of separator. The white will slip through the slots of the separator into the bowl. For food-safety reasons, do not pass the yolk back and forth from shell half to shell half. Bacteria may be present on the outside of the shell, which could contaminate the yolk or white.
