  Noodles, Soba

Thin noodles made from buckwheat flour. They have a chewy texture and a nutty flavor and can be round or flat. They make a great addition to soups and stews or can be topped with a delicate sauce. Use whole wheat spaghetti if soba noodles are unavailable.
