  Noodles, Rice Stick

Also known as rice noodles, these noodles are made from rice powder. They are opaque white in color and sold fresh or dried. Dried rice noodles are the most widely available and usually come in the form of very thin strands. Rice sticks are often fried, but when cooked, they have a creamy, soft texture. To stir-fry, soften them first in water. When deep-fried they become puffy and crisp. Angel hair or linguine can be used in place of rice stick noodles.
