Kohlrabi
Size is the secret– kohlrabi under 3 inches in diameter are the most tender! A member of the turnip family, the bulb tastes like a mild, sweet turnip and is best steamed or added to soups, stews or stir-fries. The deeply colored green leaves are also edible.
How to Buy
Choose firm, purple-tinged white bulbs with no soft spots or yellowing leaf tips. Those under 3 inches in diameter are most tender.
How to Prepare
Cut off root ends and tops. Wash; peel thinly. Cut into 1/2-inch pieces or cubes.
How to Cook Conventionally
Boil: Covered 15 to 20 minutes or until tender.
Steam: Covered 8 to 12 minutes or until tender.
How to Microwave
Place in 1-quart microwavable casserole; add 2 tablespoons water. Cover. Microwave 3 minutes 30 seconds to 5 minutes, stirring once, until tender. Let stand 2 minutes.
