  Figs, Calimyrna

One of the larger figs, Calimyrnas are pale yellow or green on the outside and have a pinkish interior with a sweet and slightly nutty flavor. The fully ripe fig drips a sweet, syrupy liquid from the stem end. Highly perishable, they are usually dried. Figs are in season from mid-June to September. When weather and crop conditions permit, the season may run as late as November.

How to Buy

Figs are fragile and can bruise easily. Look for firm, plump, aromatic figs. Avoid those that are hard or mushy.

How to Store

Figs can be ripened at home at room temperature. Once ripe, refrigerate up to 3 days. To store longer, wrap and freeze up to 6 months. Refrigerate dried figs in an airtight container up 6 months or freeze up to a year.

Figs are a nutritional bonanza! Four figs provide 5 grams of dietary fiber. One-half cup of figs provides as much calcium as 1/2 cup of milk.
