Asafatida (hing)
The hardened sap of a gargantuan fennel-like plant, asafetida has a strong flavor and aroma. It is used in eastern Indian cooking and is available either in blocks (a purer form) that must be grated, preferably with a nutmeg grater, or more commonly in powder form, which may have some turmeric added to it for color. Don't be alarmed by its strong, rather offensive odor. When cooked, the odor fades, leaving a pleasant onion-like flavor.
