I want to triple a cake recipe. I have a 12 by 16 pan that will hold the ingredients. My problem is the original recipe is for a 9 inches square pan and calls for baking 35 to 40 minutes at 350 degrees. The finished cake will be an Apricot Upside Down cake and the thickness of a serving will increase when I triple the recipe and use a different pan. How do I adjust? I want the larger cake to serve more people and still fit my cake carrier. Do I increase the temperature, attempt to bake longer or both. Sometimes when I triple a recipe the middle stays soft and the outside gets dry. I understand the toothpick test, but I don't understand how to adjust my baking. Any suggestions, recommendations, etc. would be greatly appreciated. There must be rules that professionals use that I want to learn.
