Wholesome Amaranth Bars


tablespoons butter
cup peanut butter
cup real maple syrup
cups miniature marshmallows
cups MultiGrain Cheerios™ cereal
cup popped amaranth*
cup dark chocolate chips
cup butterscotch chips
Additional popped amaranth, if desired

    Lightly spray 9-inch square pan with cooking spray.

    In deep large saucepan, melt 2 tablespoons of the butter over medium heat. Add peanut butter, syrup and marshmallows. Cook and stir until marshmallows are melted. Add cereal and 1 cup popped amaranth; stir until well coated. Press into pan.

    In small microwavable bowl, microwave chocolate chips, butterscotch chips and remaining 1 tablespoon butter uncovered on High about 1 minute, stirring once, until melted and smooth. Spread over bars. Sprinkle with additional popped amaranth. Cool. Cut into 3 rows by 3 rows.



Expert Tips

  • *To pop amaranth, heat nonstick skillet over high heat. Add 2 tablespoons amaranth at a time to the hot skillet; cook 30 to 60 seconds, stirring constantly with wooden spoon, until grains begin popping. Watch closely to prevent burning, and remove from heat as soon as amaranth is popped.
  • Amaranth is high in fiber and low in saturated fat. The grain can be popped like popcorn, flaked like oatmeal or ground into flour.
