Ingredients

cup mayonnaise

clove garlic, finely chopped

tablespoons finely chopped fresh cilantro

teaspoon lime juice

tablespoon vegetable oil

lb lean ground turkey
1
package (0.85 oz) Old El Paso™ chicken taco seasoning mix
1/4
cup water
1
can (4.5 oz) Old El Paso™ chopped green chiles
1
can (15 oz) white kidney beans, drained, rinsed

avocado, pitted, peeled and diced
1/2
cup shredded Monterey Jack cheese (2 oz)
Make it FRESH toppings, as desired (see below)

    In small bowl, mix mayonnaise, garlic, cilantro and lime juice until well blended. Set aioli aside.

    In 10-inch nonstick skillet, heat oil over medium heat. Add turkey; cook 8 to 9 minutes, stirring occasionally, until no longer pink; drain. Stir in taco seasoning mix, water, green chiles and white beans. Simmer 5 to 7 minutes, stirring occasionally, until heated through.

    Heat taco boats as directed on package. Divide turkey mixture among boats. Top with avocado, cheese, and aioli. Add Make it FRESH toppings.

  • Ideas for Make it FRESH toppings: diced tomato, cilantro, lime wedges.
  • To dice the avocado, cut in half, and remove pit. Using large spoon, scoop flesh from skin. Place one half avocado cut side down on cutting board. Make two horizontal cuts to make three planks, then cut lengthwise into strips. Turn 90 degrees, and cut again. Repeat with other half of avocado.
