Vegetable Lover's Chili

Ingredients

tablespoons chopped onion

tablespoons vegetable oil
1/4
cup sliced ripe olives

medium zucchini, cubed
1
jar (2.5 ounces) sliced mushrooms, drained

cups hot water
1
package Hamburger Helper™ zesty Italian
1
can (8 1/2 ounces) whole kernel corn, drained, or 1 cup frozen whole kernel corn
Grated Parmesan cheese, if desired

    Cook onion in oil in 12-inch skillet over medium heat, stirring occasionally, until tender.

    Stir in remaining ingredients except cheese. Heat to boiling, stirring constantly.

    Reduce heat; cover and simmer 15 to 20 minutes, stirring frequently. Uncover; cook until chili is as thick as you’d like. Sprinkle with Parmesan cheese.

Expert Tips

Serve chili in bell pepper bowls. Cut thin slices from stem end of peppers; remove seeds and membranes. Fill with chili just before serving. Top with the tops (or chop and use them in other recipes).
