Ingredients

cup firmly packed brown sugar

(3.25-oz.) jar macadamia nuts, coarsely chopped (about 2/3 cup)

(7-oz.) pkg. diced dried tropical fruits and raisins

    Heat oven to 375°F. Spray cookie sheets with nonstick cooking spray. In large bowl, combine sugar, brown sugar and butter; beat until light and fluffy. Add vanilla and eggs; blend well. Add flour and baking soda; mix well. Stir in oats, coconut, nuts and dried fruits.

    Drop dough by rounded tablespoonfuls 2 inches apart onto sprayed cookie sheets.

    Bake at 375°F. for 7 to 10 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets.

Expert Tips

  • Diced dried fruit is convenient for recipes. The packaged mixture we used in this recipe contained golden raisins, pineapple, papaya, apricots and mango.
  • Coconut dries when it's exposed to air; seal an opened package of coconut in an airtight container or plastic bag and keep it refrigerated for up to six months.
  • Try coarsely chopped walnuts in place of the macadamia nuts.
