Sweet Potato and Spinach Grain Salad

Sautéed sweet potatoes, fresh spinach, crumbled goat cheese and a zesty orange vinaigrette play well together in this hearty grain salad. MORE + LESS -

Ingredients

box Betty Crocker™ Suddenly Grain Salad™ harvest grains

tablespoons olive oil

tablespoon water
1
cup chopped peeled sweet potato
1/2
teaspoon salt
1/4
teaspoon pepper
1
cup packed fresh baby spinach leaves
1/3
cup crumbled goat cheese
1
tablespoon chopped fresh parsley leaves
1
teaspoon grated orange peel

    Fill 3-quart saucepan half full with water; heat to boiling. Carefully place unopened bag of grains (from salad box) in water. Gently boil uncovered 17 minutes, turning bag once.

    Meanwhile, in large bowl, stir together dressing mix (from salad box), 1 tablespoon of the olive oil and the water. Set aside.

    In 8-inch skillet, heat remaining 1 tablespoon olive oil over medium heat. Add sweet potatoes, salt and pepper; stir to combine. Cook 10 to 15 minutes, stirring frequently, until potatoes are fork-tender and lightly browned on all sides.

    Place unopened bag of cooked grains into colander. Rinse bag with warm water; drain.

    Open bag of grains. Add grains, sweet potatoes, spinach, goat cheese, parsley, orange peel and cranberries & almonds (from salad box) to dressing; toss to coat. Serve immediately, or cover and refrigerate until ready to serve.

Expert Tips

  • Make it a meal: Top this salad with your favorite protein, such as baked salmon or grilled chicken.
  • This recipe can easily be doubled. Use a 4- or 5-quart saucepan to cook both bags of grains at the same time.
