Ingredients

  • 4 soft hoagie or submarine sandwich rolls (about 6 inches), split
  • 2 tablespoons mayonnaise or salad dressing
  • 1/4 cup sun-dried tomato spread
  • 4 romaine leaves
  • 8 ounces thinly sliced cooked turkey
  • 8 very thin slices red onion
  • 4 slices (1 ounce each) mozzarella cheese
  • 1/4 cup sliced ripe olives

Steps

  • 1
Spread bottom halves of rolls with mayonnaise; spread top halves with tomato spread. For each sandwich, layer ingredients in this order: romaine, turkey, onion, cheese and olives.
  • 2
Cut each sandwich in half. Serve immediately or wrap each sandwich in plastic wrap. Refrigerate until serving or up to 24 hours.

Tips from the Betty Crocker Kitchens

  • tip 1
Provolone or Colby cheese slices can be used instead of the mozzarella.
  • tip 2
Chill individual cans of fruit cocktail to serve with the sandwiches. Chocolate chip cookies make a perfect dessert.
  • tip 3
The sun-dried tomato spread can be found near the Italian foods or in the produce department of the grocery store. If you can't locate it, substitute a thin layer of julienne-cut sun-dried tomatoes packed in oil.
