Strawberry Margarita Shortcakes

Ingredients

lb fresh strawberries, sliced
1/4
cup tequila
1
tablespoon sugar

individual sponge shortcake cups
1
container (8 oz) frozen whipped topping, thawed
Grated peel of 1 lime

    In medium bowl, stir together strawberries, tequila and sugar. Let stand 30 minutes.

    To serve, spoon strawberries evenly into shortcake cups. Dollop with whipped topping; sprinkle with lime peel. Drizzle with strawberry liquid left in bowl.

Tips

Expert Tips

  • Taste your strawberries before slicing; if they’re not incredibly sweet, add more than 1 tablespoon sugar.
  • The longer you allow the strawberries to stand with the sugar and tequila, the more flavorful they will be. You can mix them the night before and refrigerate until serving.
  • Rum can be substituted for the tequila. Or, to make this a kid-friendly dessert, leave out the tequila altogether.
