Ingredients

box Betty Crocker™ Suddenly Grain Salad™ Tuscan grains

tablespoons olive oil

tablespoons water

cup frozen sweet peas, cooked as directed on package
1/2
cup frozen asparagus pieces, cooked as directed on package

tablespoons chopped fresh parsley leaves

tablespoons chopped fresh basil leaves
2
tablespoons chopped fresh chives
2
teaspoons grated lemon peel
1
large avocado, peeled, pitted and chopped

    Fill 3-quart saucepan half full with water; heat to boiling. Carefully place unopened bag of grains (from salad box) in water. Gently boil uncovered 17 minutes, turning bag once.

    Meanwhile, in large bowl, stir together dressing mix (from salad box), oil and water. Set aside.

    Place unopened bag of cooked grains into colander. Rinse bag with warm water; drain.

    Open bag of grains. Add grains, peas, asparagus, parsley, basil, chives, lemon peel and almonds (from salad box) to dressing; toss to coat. Add chopped avocado; gently toss to combine. Serve immediately, or cover and refrigerate until ready to serve.

  • Make it a meal: Top this salad with your favorite protein, such as baked salmon or grilled chicken.
  • This recipe can easily be doubled. Use a 4- or 5-quart saucepan to cook both bags of grains at the same time.
