Spiced Bulgur-and-Barley Balls

Ingredients

  • 2 1/4 cups cooked bulgur
  • 1 1/2 cups cooked barley
  • 1/4 cup milk
  • 2 tablespoons dry bread crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1 egg, beaten
  • 1/4 cup ground walnuts
  • 2 tablespoons margarine or butter

Steps

    Mix all ingredients except walnuts and margarine. Shape mixture into 1-inch balls. Roll balls in walnuts.

    Melt margarine in 10-inch skillet over medium-high heat. Cook balls in margarine 10 to 12 minutes, turning frequently, until light brown.

  • These bulgur-and-barley balls can be used in all the same ways as meatballs. Line them up in a hot dog bun, drizzle with ketchup and mustard and you have a great sandwich. Or top pasta with your favorite sauce and these tasty little grain balls.
