Spanish Sausage Coins

Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup finely chopped onion
  • 3 garlic cloves, minced
  • 1 lb. cooked Polish sausage or kielbasa links, cut into 1/2-inch-thick slices
  • 1 teaspoon paprika
  • 1/2 teaspoon coriander
  • Dash ground red pepper (cayenne)
  • 1 (8-oz.) can tomato sauce
  • 1/4 cup dry red wine (such as Rioja, Bordeaux or Merlot)

    Heat oil in large skillet over medium heat until hot. Add onion; cook 4 to 5 minutes or until softened, stirring occasionally.

    Add garlic; cook and stir 30 to 60 seconds or until fragrant. Add sausage slices; cook 2 to 4 minutes or until lightly browned, turning once.

    Stir in paprika, coriander and ground red pepper. Add tomato sauce and wine; cook about 5 minutes to reduce slightly, stirring occasionally. Serve warm sausage mixture with cocktail toothpicks.

  • To reduce a sauce means to cook it until some of the liquid evaporates. Not only does this process thicken the sauce, it also intensifies the flavor.
  • Rioja is a dry red wine from the LaRioja province in Spain. The oak barrels in which it is aged impart a vanilla flavor.
  • Try another cooked link sausage, such as Spanish smoked chorizo, for these coins.
