Southwestern Taco Skillet

Ingredients

lb lean (at least 80%) ground beef

cup chopped onion
1
clove garlic, finely chopped
2 1/2
cups hot water
1
cup milk
1
box Hamburger Helper™ crunchy taco
1
large red or green bell pepper, diced (about 1 cup)
1
cup canned black beans, drained, rinsed
1
can (11 oz) whole kernel corn, drained
1
cup shredded Cheddar cheese (4 oz)

    In 12-inch skillet, brown beef, onion and garlic over medium-high heat, stirring frequently, until thoroughly cooked; drain.

    Stir in hot water, milk, sauce mix, topping mix and uncooked rice (from Hamburger Helper box), bell pepper, beans and corn. Heat to boiling, stirring occasionally.

    Reduce heat; cover and simmer about 20 minutes, stirring occasionally, until rice is tender.
  • 4
    Remove from heat. Sprinkle with cheese and corn chips (from Hamburger Helper box).

  • If desired, fill warm tortillas or taco shells with beef mixture.
