Ingredients

  • 1 loaf (1 pound) French bread
  • 1/3 cup mayonnaise or salad dressing
  • 1 tablespoon Key West-style coarsely ground seasoning blend
  • 6 ounces Monterey Jack cheese, sliced
  • 1 pound sliced cooked deli chicken breast
  • 2 cups lightly packed spring salad greens mix or small lettuce leaves
  • 1 medium sweet onion or Bermuda onion, thinly sliced
  • 1 medium red bell pepper, thinly sliced into rings

Steps

    Cut bread horizontally in half. Mix mayonnaise and seasoning; spread over cut sides of bread.

    Layer cheese, chicken, salad greens, onion and red pepper on bottom half of bread. Add top half of bread. Secure loaf with 6 long wooden picks or small skewers. Cut into 6 serving pieces.

    Wrap the entire loaf with waxed paper. Tie with 6 pieces of twine, spacing evenly along loaf. To serve, cut between twine into 6 serving pieces.

    If sweet onions are not available, slices of red onion would be equally delicious in these flavor-packed sub sandwiches.
  • tip 3
    French bread loaves vary in thickness depending on where they're purchased. If your loaf is very thick, pull out some of the soft bread in the center so the sandwich won't stack too high.
