2Cover and cook on low heat setting 6 to 8 hours or until beans are tender.
Southern "string" beans are traditionally simmered in a ham broth made with a ham bone or ham hock until tender and very flavorful. They're considered a real treat in the South. This recipe uses smoked ham or pork chops because they're easier to find.
