1Mix all ingredients in 3 1/2- to 4-quart slow cooker.
2Cover and cook on low heat setting 5 to 6 hours to blend and develop flavors.
You're probably most familiar with pimientos as a stuffing in green olives. Pimientos can be purchased canned or bottled. They taste sweeter and more succulent than red bell peppers.
This black bean dish tastes great as a meatless main dish with rice. Place a mound of hot rice in the middle of each individual shallow bowl and spoon the black bean mixture around the rice. Serve with plenty of chopped red onion and hard-cooked eggs to sprinkle on top.
