Ingredients

  • 2 cups chopped cooked lean beef or corned beef
  • 4 small potatoes, cooked and chopped (2 cups)
  • 1 medium onion, chopped (1/2 cup)
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 to 3 tablespoons vegetable oil

    In large bowl, mix beef, potatoes, onion, parsley, salt and pepper.

    In 10-inch skillet, heat oil over medium heat. Spread beef mixture evenly in skillet. Cook 10 to 15 minutes, turning frequently, until brown.

    For extra convenience, substitute 2 cups frozen diced hash browns, partially thawed, for the potatoes.

    Oven Hash: Heat oven to 350°F. Spray 8-inch square baking dish with cooking spray. Omit oil. Spread beef mixture evenly in baking dish. Bake uncovered about 20 minutes or until hot.
