Ingredients

tablespoon olive or vegetable oil

medium stalks celery, sliced (1 cup)

medium carrots, sliced (1 cup)

medium onion, chopped (1/2 cup)

can (15 to 16 ounces) great northern beans, rinsed and drained

can (15 to 16 ounces) dark red kidney beans, rinsed and drained

can (14 1/2 ounces) stewed tomatoes, undrained

tablespoons molasses
3/4
teaspoon dried thyme leaves
1/4
teaspoon salt

tablespoons chopped fresh parsley

    Heat oil in 12-inch skillet over medium-high heat. Cook celery, carrots and onion in oil 4 to 6 minutes, stirring occasionally, until crisp-tender.

    Stir in remaining ingredients except parsley. Cook uncovered over medium-low heat 10 to 15 minutes or until vegetables are tender. Sprinkle with parsley.

Expert Tips

A cassoulet is a classic French dish made with white beans and a variety of meats. Traditionally, it is covered and simmered slowly to blend the flavors. We find this quicker version without meat still makes a tasty hearty meal that will satisfy anyone's appetite.

Add 1/2 pound fully cooked smoked turkey sausage link, cut into 1/4-inch slices, with remaining ingredients in step 2. Continue as directed.
