Shrimp and Mango Grain Salad

Ingredients

box Betty Crocker™ Suddenly Grain Salad™ southwest grains

tablespoons olive oil

tablespoon water
1
tablespoon honey
2
teaspoons lime juice
2
teaspoons grated lime peel

lb uncooked deveined peeled medium shrimp, tail shells removed
1/2
cup chopped fresh mango
1/2
cup shredded red cabbage
2
tablespoons chopped fresh cilantro leaves

    Fill 3-quart saucepan half full with water; heat to boiling. Carefully place unopened bag of grains (from salad box) in water. Gently boil uncovered 17 minutes, turning bag once.

    Meanwhile, in large bowl, stir together dressing mix (from salad box), 1 tablespoon of the olive oil, the water, honey, lime juice and lime peel. Set aside.

    In 8-inch skillet, heat remaining 1 tablespoon olive oil over medium-high heat. Add shrimp; cook 2 to 4 minutes, tossing occasionally, until shrimp turn pink.

    Place unopened bag of cooked grains into colander. Rinse bag with warm water; drain.

    Open bag of grains. Add grains, shrimp, mango, cabbage and cilantro to dressing; toss to coat. Serve immediately, or cover and refrigerate until ready to serve.

Expert Tips

  • If serving this salad cold, you can swap the uncooked shrimp for precooked frozen (thawed) medium shrimp.
  • This recipe can easily be doubled. Use a 4- or 5-quart saucepan to cook both bags of grains at the same time.
