Ingredients

tablespoon paprika

teaspoon dry mustard

boneless skinless chicken breasts (1 1/4 lb)

teaspoons peanut oil

cup chopped onion

cloves garlic, finely chopped
3/4
cup Progresso™ chicken broth
1/4
cup white wine
1
small tomato, seeded, chopped
Chopped fresh parsley, if desired

    In small bowl, mix matzo meal, paprika, dry mustard, salt and pepper until well mixed. Coat chicken evenly with matzo meal mixture, reserving any remaining mixture.

    In 12-inch nonstick skillet, heat 3 teaspoons of the oil over medium heat until hot. Add chicken; cook 1 to 2 minutes on each side or until lightly browned. Remove chicken from skillet; keep warm.

    In same skillet, heat remaining 1 teaspoon oil. Add onion and garlic; cook and stir until onion is tender. Add broth, wine and reserved matzo mixture; mix well. Return chicken to skillet. Heat to boiling. Reduce heat; cover and simmer 7 to 9 minutes or until juice of chicken is clear when center of thickest part is cut (170°F). Stir in tomato; cover and cook 2 to 3 minutes longer. Garnish with parsley.

  • You can omit the white wine and increase chicken broth 1 cup.
