Enjoy this hearty slow cooked pork recipe made with dried fruits – perfect for dinner.
Check that the package of dried fruit contains large pieces of fruit, such as slices of peaches, apples, pears and apricots. Diced dried fruit is also available, but the pieces are so small that they overcook and become part of the sauce during the long, slow cooking.
Although apricot nectar enhances the flavors of the dried fruit, feel free to also use 3/4 cup of another light-colored fruit juice, such as apple, orange or pineapple.
Parsley-buttered new potatoes and steamed baby carrots are all that is needed to complete this Scandinavian-influenced dish and satisfy everyone at dinner.
