Peach and Pepper Relish

There's no cooking required for this sweet and spicy combination of peaches, red bell peppers and Serrano chiles.

Ingredients

  • 2 medium peaches, peeled, finely chopped
  • 1/3 cup finely chopped red bell pepper
  • 1 serrano chile, seeded, finely chopped
  • 1 green onion, finely chopped
  • 2 tablespoons finely chopped fresh mint leaves
  • 1 tablespoon honey

Steps

    In medium bowl, mix all ingredients. Serve or cover and refrigerate.

  • tip 1
    Make sure peaches are ripe but still firm. Avoid using soft peaches for this recipe.

    For even more peach flavor, brush hot dogs with peach preserves while grilling before serving with this relish.
  • tip 3
    Refrigerating the relish for a while before serving will allow the flavors to blend.
