Overstuffed Turkey, Avocado & Spinach Sandwich with Lemon

avocado, pit removed
slices whole grain bread
Spinach leaves
Sliced turkey
Sliced red onion
Fresh lemon juice

    Remove avocado flesh from avocado half; spread on one side of each slice of bread. Top 1 slice with spinach, turkey and onion; drizzle with lemon juice. Cover with remaining slice of bread, avocado side down.



Expert Tips

With clean eating, you traditionally don’t use condiments, so I love using the mashed avocado as a condiment for this sandwich.

Don’t like turkey? Substitute lean ham or even sliced hard-boiled eggs for the turkey.

For a little bit of extra crunch, add sliced cucumbers to your sandwich.
