Orange-Almond Trout

Ingredients

  • 1 lb trout, salmon or other medium-firm fish fillets, about 3/4 inch thick
  • 1/4 cup butter or margarine
  • 1/4 cup sliced almonds
  • 1 medium onion, sliced
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/8 teaspoon pepper
  • 2 oranges, peeled and sectioned

    If fish fillets are large, cut into 4 serving pieces.

    In 10-inch skillet, melt butter over medium heat. Cook almonds and onion in butter, stirring occasionally, until onion is tender. Remove almonds and onion with slotted spoon; keep warm.

    In shallow dish, mix flour, salt, paprika and pepper. Coat fish with flour mixture. Cook fish in same skillet over medium heat 6 to 10 minutes, turning once, until fish is brown and flakes easily with fork.

    Top fish with almonds and onion. Garnish with orange sections.
