Mom’s Ultimate Lettuce Wraps

Ingredients

pound ground turkey

medium green onions, sliced (1/2 cup)

cup coarsely chopped carrots

cup diced red bell pepper

teaspoon grated gingerroot

cloves garlic, finely chopped

cup fresh bean sprouts

cup soy sauce
1/3
cup packed brown sugar

medium iceberg or Bibb lettuce leaves, rinsed, patted dry with paper towel

    In 10-inch nonstick skillet, cook turkey over medium-high heat, stirring frequently, until no longer pink; drain and return to skillet. Stir in onions, carrots, bell pepper, gingerroot and garlic. Cook 2 minutes, stirring occasionally, or until vegetables are crisp-tender.

    Add the bean sprouts, soy sauce and brown sugar. Cook 2 minutes, stirring occasionally, to blend flavors.

    To serve, spoon turkey mixture onto each lettuce leaf; wrap around filling. Serve warm.

Expert Tips

  • Get Spicy! For a touch of Thai Peanut flavor, add a teaspoon of peanut butter and a teaspoon of spicy Thai chili sauce after adding the brown sugar. Serve your wraps sprinkled with chopped peanuts.
  • These wraps are equally delicious when served in Endive boats and Butter Lettuce leaves.
