Mascarpone and Pistachio Toasts

Creamy mascarpone and crunchy pistachios are perfect partners in these quick-and-easy snacks.

Ingredients

  • 4 oz mascarpone cheese (about 1/2 cup), softened
  • 18 slices (1/4 inch thick) baguette French bread
  • 1/3 cup pistachio nuts (about 2 oz), coarsely chopped
  • 2 tablespoons honey
  • 2 tablespoons thinly sliced fresh basil leaves

Steps

  • 1
    Heat oven to 350°F. Spread cheese on each bread slice. Place in single layer in ungreased 15x10x1-inch pan. Sprinkle nuts over cheese.

    Bake 10 to 12 minutes or until edges of bread are light golden.

    Drizzle honey over top of each toast. Garnish with basil.

    If mascarpone isn't available, you can still make these tasty toasts. Use 4 ounces of cream cheese, softened, instead.

    Spray your tablespoon with cooking spray to keep the honey from sticking when you measure it.
