Marinated Havarti Cheese Kabobs

Store-bought balsamic vinaigrette is a speedy marinade for cucumber, cheese, olives and tomatoes.

Ingredients

  • 4 slices (1/2 inch thick) English cucumber, cut crosswise in half
  • 8 ounces Havarti cheese, cut into 1/2- to 3/4-inch cubes (32 cubes)
  • 1/2 cup balsamic vinaigrette
  • 8 pitted Kalamata or ripe olives
  • 16 red and/or yellow cherry tomatoes or yellow pear tomatoes

Steps

    Mix cucumber, cheese and vinaigrette in shallow dish. Let stand at room temperature 30 minutes to marinate.
  • 2
    Thread 1 cucumber piece or olive, 2 cheese cubes and 1 tomato on each of 16 small cock-tail skewers. Serve immediately, or refrigerate until ready to serve.

  • tip 1
    You can use any firm cheese to substitute for the Havarti. Try Gouda, Cheddar, Colby or mozzarella.
  • tip 2
    The kabobs can be made up to 4 hours in advance. Place carefully in a plastic container and cover tightly for toting. Arrange for serving at your destination.
  • tip 3
    Garnish the outside of the platter of kabobs with rosemary sprigs to resemble a wreath.
